I can eat a raw carrot. But as soon as you slice it or grate it I'm done. Weird?).<br /><br />I would maybe replace the beans and carrot in the salad with steamed beans and baby carrots. I actually like a little bit of something warm in a salad and I absolutely LOVE steamed carrots and beans. Same food. Same (almost) nutrients. Could work?
